Watami holds the ‘Battle of the Best Shikomi’ 2025 at S Maison Conrad on Sept. 15 where 22 chefs battled it out to see who would be awarded the Best Shikomi for 2025. It is an open competition for chefs all across the different Watami locations, where they would be put to the test based on the proper ‘Shikomi’ or preparation of sushi, ingredients and their stations and line check.
