Experience authentic Chinese cuisine in the country’s first Wu Xing restaurant

Pampanga is widely known as a culinary destination among tourists where they can experience authentic versions of well-loved Filipino food like sisig, menudo, and kaldereta. 

Now, as Clark Marriott recently launched the first Wu Xing restaurant that brings the taste of authentic Chinese food to Clark Freeport Zone, the province is poised to be the newest dining destination for Chinese cuisine.

Chef Raymond Yeung expertly carves a Peking duck

“We are bringing authentic and traditional Peking duck to northern Luzon. We are already a destination for people to staycation coming out of Manila for the weekend. That was the bread and butter for the last 12 months, and it grew compared to the pre-pandemic period. Now, people have more reasons to make the trip to Clark Marriott,” said Clark Marriott general manager Goeran Soelter. 

Upon entering the restaurant, a view of the kitchen greets diners, showing them how the ducks are roasted and prepared. As they approach the dining area, diners will feel transported to Hong Kong as the interior features Chinese fixtures to give diners an authentic experience.

Besides the main dining area, Wu Xing also features five dining areas that accommodate small to large parties. 

Guests can then delight themselves with expertly prepared dishes such as crispy soft tofu with hoisin sauce (P420), roasted pork belly (P880), honey-glazed barbecued pork (P580),  deep-fried tiger prawn, shrimp mousse (P440 per piece), a bowl of Buddha Jumps Over The Wall (P2,880), and more. 

A whole roasted Peking duck

Wu Xing’s main attraction is the Peking duck sourced directly from China. The duck is then marinated and roasted in a traditional Beijing oven using star apple firewood to bring out the natural flavors and aroma of the protein. A whole roasted duck costs P3,380. 

The restaurant serves the duck rolled in a hot Chinese pancake with cucumbers, onion leeks, pickled ginger, and a special hoisin sauce. Wu Xing also serves their duck minced with Romaine lettuce to let diners experience a depth of flavor.

Award-winning, new-generation chef Raymond Yeung receives all the credit for producing such flavorful dishes. 

“Traditional Chinese cuisine was developed through almost 500 years of Chinese history. At Wu Xing, we follow the Beijing style of preparing and cooking our Peking duck using Clark Marriott’s specialized equipment,” Yeung said. 

Deep-fried tiger prawn, shrimp mousse

Yeung has 30 years of experience in Chinese cuisine, with Cantonese as his specialty. He is an expert in merging complex flavors thanks to his rich experience in the diverse world of modern Chinese cuisine. 

He also took a five-year course in Hong Kong at the Chinese Cuisine Training Institute (CCTI) from 2000 to 2005.

When it came to developing the menu for Wu Xing, Yeung paid extraordinary detail to draw the best regional styles across China from Beijing to Shanghai to Sichuan to Hong Kong and took the best out of them to create the restaurant’s dishes.
