Celebrity Chef Jereme Leung brings a touch of whimsy and innovation to Conrad Manila

Renowned chef Jereme Leung has returned to Conrad Manila’s award-winning and eponymous restaurant, China Blue by Jereme Leung, to present an exclusive multi-course set menu with this principle in mind.

“Some restaurants make the food too complicated—the dish is beautiful, but it is not too tasty,” he said during an intimate preview of his new dishes.

Perhaps it was because of his humble beginnings—Chef Leung started as a dishwasher in 1983—or perhaps it was the wisdom of a man who now has eight restaurants to his name: this Hong Kong-born chef always makes sure that all his dishes are delicious, regardless of how whimsical or plain the presentation may be.

The exclusive dining experience, priced at P6,588 nett per person, features a carefully curated menu beginning with a selection of appetizers that includes suckling pig stuffed with black glutinous rice and salted egg, deep-fried sea cucumber and shrimp with taro in spicy hawthorn sauce, and marinated dehydrated vegetables and century egg with porcini mushroom sauce served in a crispy tube.

For the main course, guests are served slow-cooked duck leg glazed with pickled olive dark sweet soy, steamed spinach egg custard topped with seared US scallop in dry scallop pickled ginger sauce, and poached flat noodles with fresh crab meat, fragrant shallots, and spring onion sauce.

The meal concludes with a dessert of chocolate tree paired with pandan sponge and raspberry ice cream.

“None of my restaurants duplicate the menu. So, what I prepared here for Conrad Manila is a complete set of new creations. We do not repeat our dishes—that is the fun part, but it is also difficult to execute,” Chef Leung said.

“Returning to Conrad Manila is truly special. Each element is chosen with care, with the collective purpose of taking diners through a deeply immersive and memorable experience that celebrates the richness of Chinese cuisine.”

For a limited time—only until April 30—guests are invited to experience Chef Leung’s innovative culinary approach through meticulously crafted dishes made with ingredients sourced locally and within East Asia.

The exclusive multi-course set menu is available for lunch (11:00 a.m. to 2:30 p.m.) and dinner (6:00 p.m. to 10:00 p.m.), daily until April 30.
