Quick, healthy meals for busy parents

Holiday’s over and this means most of us are back to the daily grind—kids at school and adults at work. Days are doubly challenging for parents who are always rushing from one thing to the next without any time to rest. On busy days when moms and dads can only spare a couple minutes to prepare healthy and filling meals, Turkish appliances brand Beko shares these recipes:

Chicken and Spinach Wrap (Cooking time: 15 min. | Serves: 1)

Ingredients:

 

1 pc. wrap 

1 pc. hard boiled egg 

100g roast chicken 

50g raw spinach 

½ slice avocado 

1 pc. tomato 

50g rocket sesame seeds 

salt and cayenne

Procedure: 

Take a large tortilla then flake the chicken inside the tortilla.

Slice the avocado, hard boiled egg, and tomato.   

Cut the spinach leaves into pieces.  

Place all ingredients inside the wrap. Roll.  

Season with sesame seeds, salt, and cayenne as desired.

Veggie Nuggets (Cooking time: 25 min. | Serves: 2)

Ingredients:

125g shredded carrots 

225g broccoli florets 

1 clove garlic 

2 pcs. eggs 

125g breadcrumbs, divided 

100g shredded cheddar cheese 

1g onion powder 

1g salt 

10g canola oil 

seasoning (optional)

Procedure:

Shred carrots. Stem broccoli until tender.

Place shredded carrots, steamed broccoli, garlic, eggs, 1 cup of breadcrumbs, cheese, and onion powder in food processor and pulse for 15 seconds until well combined. Mixture should easily form into a ball. If it’s too crumbly, add water, one teaspoon at a time, until you achieve the desired consistency. 

Form mixture into balls. Flatten slightly into round discs.  

Place remaining breadcrumbs on a shallow dish. Coat each nugget with breadcrumbs. 

Heat oil in a skillet on medium high heat. Arrange nuggets in the skillet and cook about 3-4 minutes each side until golden brown and crispy.  

Serve with yogurt and mint dip.

Smoked Mackerel and Avocado Toast (Cooking time: 10 min. | Serves: 2)

Ingredients:

 

4 pcs. thick slices of cereal bread 

2 pcs. avocado 

250g smoked mackerel 

2 pcs. Granny Smith apples 

12 pcs. cherry tomatoes 

shelled walnuts 

fresh rosemary  

extra virgin olive oil 

salt

Procedure: 

Toast the bread slices.

Peel the avocados and spread them over the toast.   

Cut the apple into thin slices and place them on the avocado.   

Add the smoked mackerel, cherry tomatoes cut in half, walnuts, rosemary, and then season.
