‘Rice’ to the occasion

Rice. It is a staple in Filipino cuisine. It is equally important in other Asian cuisines, particularly in Japanese and Thailand, which also rely heavily on rice in its traditional dishes. In Japanese cuisine, there can be no sushis, makis, temakis and other delightful rolls without rice, which is the main ingredient. Classic Japanese favorites, such as Ebi Tempura, Chicken Teriyaki and Beef Teppanyaki, are best eaten with steamed rice or Chahan fried rice. As for Thai dishes, which border on the spicy, they achieve a perfect balance in taste when paired with freshly cooked rice. Thai cuisine even has a dessert, Sticky Rice with Mango, that’s w ell-loved the world over.

To show case the versatility of rice, Mrs. Lam Rice recently tapped SKD Culinary Arts graduating student Joel Navarro to create recipes using different varieties of rice distributed by ECT Enterprises under the Mrs. Lam Rice brand. One of the recipes that he prepared is a Thai recipe featuring Mrs. Lam Rice’s Thai Hom Mali Jasmine Rice. The Mrs Lam Thai Hom Mali Jasmine rice is not just 98 percent pure but also the best in the market. In view of this, here is a new twist on your Thai Rice recipe:

Thai Kao Kluk Kapi

–  60 ml vegetable oil

–  2 pieces egg, w hisked

–  15g dried shrimps

–  100g pork belly, thinly sliced

–  15g sugar, w hite

–  15ml soy sauce

–  15ml palm oil

–  15g shallots sliced

–  14g chilies, chopped

–  30g shrimp paste

–  30ml oyster sauce

–  200g Mrs Lam Thai Jasmine Rice

–  30g basil leaves

–  Black pepper, ground

How to cook

1.  Heat oil in a pan

2. Cook egg into omelet. Remove omelet from the pan, slice and set aside

3. In the same pan, fry dried shrimp, remove from the pan and set aside

4. In the same pan, add pork and fry until golden brown. Set aside

5. Prepare sugar soy sauce. In a pan, cook sugar and soy sauce until caramelized. Set aside

6. In a separate pan, heat oil. Sauté shallots and chilies in the pan

7. Add belachan, oyster sauce and sugar-soy sauce mixture to the pan. Cook until heated through

8. Add dried shrimp, fried pork and sliced omelet to the pan. Stir to combine w ell all ingredients

9. Add rice to the pan. Mix w ell to combine ingredients

10. Add basil leaves to the pan. Season with ground black pepper

11. Mix w ell to combine ingredients. Continue cooking over medium heat

12. Transfer to plate. Arrange cucumber, green mango, coriander and sausage on the plate
