Caprese Salad
Preparation Time: 10 minutes
Serving: For 4 people
Ingredients:
4 Ripe, firm tomatoes (or sub with 2 dozen cherry tomatoes)
2 Medium sized sliced balls (or blocks) of Mozzarella
10 Fresh Basil Leaves
1TSP Bertolli balsamic vinegar
2TSP Bertolli Extra virgin olive oil
salt and pepper
Instructions:
Slice Mozzarella and Tomatoes.
Arrange them together on the dish with the Mozzarella covering the tomatoes.
Dress the dish with Extra Virgin Olive Oil, Balsamic Vinegar.
Add pinch of Salt and Pepper.
Garnish the plate with fresh basil leaves.
Roast Meat with Balsamic Vinegar of Modena
Preparation time: 30 minutes
Serving: For 4 People
Ingredients:
600/700g meat (bottom round)
3TSP Bertolli Extra Virgin Olive Oil
2 Desalted Anchovy Fillets
1clove garlic
salt and black pepper
small branches of rosemary
1TSP Bertolli Balsamic Vinegar
Instructions:
Prepare a mixture with the garlic, rosemary, anchovy, salt and pepper.
Poke holes in the meat and insert the mixture.
Tie the meat with a kitchen-string, add more rosemary, and let it season in oil for at least an hour.
Put it in a large pan with hot oil and scald it on both sides.
Roast it in the oven for about 10 minutes or longer
Remove from the oven, cut in slices.
Sprinkle with Bertolli Balsamic Vinegar and a few drops of cooking dressing.
